Bakewell tart and tartlets
Cost. Approx AU$18
Time. Approx 1 hour
- 200g of shortcrust pastry
- 6 tablespoons strawberry jam
- 60g butter
- 60g caster sugar
- 1 egg
- 3 tablespoons plain flour
- 100g ground almonds
- 1/4 tsp baking powder
- flaked almonds
- Pre-heat oven to 190 C
- One big tart of several tartlets. Get these ready for the jam….
- Spread jam evenly in the base.
- Beat butter and sugar until white and creamy. Beat the egg in
- Mix the flour and ground almonds together in a separate bowl. Then, fold this mixture, one spoon at a time into the wet mixture using a metal spoon. On the last spoon add the baking powder.
- Spread this mixture over the jam layer
- Sprinkle flaked almonds on top
- Bake in the oven for about 30 minutes until browned and thoroughly cooked.
